Desired Dough Temperature (DDT) Calculator

Mixer friction, room temperature, flour temperature and preferment all affect final dough temperature. Enter your target DDT and get the exact water temperature to use.

How DDT works

The multiplier is 4 when there is a preferment, otherwise 3.

Water temperature = target × multiplier − room − flour − preferment − friction.

If the result is below tap temperature, use ice water; if it is above 40 °C, your dough may overheat.
